About Me
After many years of working full-time, living in the fast-lane, and experiencing a growth in violent crime in Central Florida, my husband and I retired to the peaceful mountains of Murphy, NC with our cat, Maxine. I earned my elementary education degree from UCF in 1987 when our children became teenagers and could help me get through the math courses! Our children and grandchildren are now scattered from Kansas City, KS to Center Conway, NH. For twenty-two years, I enjoyed the energy my students brought to the classroom. In 2007, we visited this area, fell in love with the people and their way of life, and purchased a home which was to be our summer home. I've always had an interest in healthy eating and incorporated some form of exercise into my daily routine. Here in the Blue Ridge Mountain area, the availability of organic, local farm fresh fruits and vegetables, free range grass-fed beef and chicken, and home gardening make it much easier to live the life-style we have chosen. On average, winters are shorter than the New England winters where we grew up and summers are drier and cooler than the blazing heat and humidity of Central Florida. My parents planted a garden every year large enough to feed others and still have enough to freeze and can to sustain our family through the cold NE winters. I am back to my roots, feeling the same pleasure and pride of providing for our home.
